The tomato, introduced from the Americas, was initially regarded with suspicion across Europe; it was the poor of Naples who first embraced it, and the combination of flatbread, tomato, and mozzarella from the buffalo herds of the Campanian plains created a food of genius. Pizzeria Brandi, founded in 1780 on Via Chiaia near the Piazza del Plebiscito, claims to have invented the Pizza Margherita in 1889, when the pizzaiolo Raffaele Esposito created a pizza in the colours of the Italian flag, red tomato, white mozzarella, green basil, for Queen Margherita of Savoy. The letter of royal thanks still hangs on the wall. True Neapolitan pizza, certified by the Associazione Verace Pizza Napoletana, must be made by hand, cooked in a wood-fired oven at 485°C, and eaten immediately.
