About Mugaritz
Andoni Luis Aduriz's two-Michelin-star restaurant 20 kilometres east of San Sebastián, regularly voted among the world's five best, it is the most intellectually provocative restaurant in Spain, where food dissolves into philosophy, poetry, and art.
Mugaritz, meaning "oak border" in Basque, is located in Errenteria, 20 kilometres east of San Sebastián, in a converted farmhouse set in the hills above the Urumea valley. The restaurant was founded by Andoni Luis Aduriz in 1998, after he had worked under Ferran Adrià at El Bulli. It has held two Michelin stars since 2005 and has been voted among the world's five best restaurants every year since 2006 (reaching #2 in 2011 and 2013). Mugaritz occupies a unique position among the world's great restaurants: while Arzak's approach is to be extraordinarily good at a comprehensible genre, Mugaritz is explicitly conceptual and experimental, its dishes regularly challenge the diner's assumptions about what food can be. A meal here involves around 20 courses, takes about three hours, and proceeds from the familiar to the uncanny. The restaurant is closed for four months each year (January-April) while Aduriz and his team conduct research and develop new concepts for the coming season.
Did you know? Mugaritz was entirely destroyed by fire in February 2010, the kitchen and dining room burned down completely, forcing the restaurant to close for several months for reconstruction. Aduriz and his team used the enforced break to completely reinvent the menu and approach, and the rebuilt Mugaritz that reopened in June 2010 was considered even more experimental than before.
