Beneath the streets of Gallipoli's island old town lies an extraordinary network of underground olive oil presses (frantoi ipogei), the physical infrastructure of the city's 17th and 18th-century commercial empire. These underground installations were built into the soft limestone of the island, carved to the exact depth and temperature required for optimal olive oil pressing. The Gallipoli frantoi were enormous: some complexes had multiple pressing chambers, storage cisterns with capacities of many thousands of litres, and workers' facilities. The oil was processed underground, stored in the cisterns, and then loaded onto ships in the harbour for export to northern Europe. Several of these underground complexes have been preserved and are open to visitors, offering a dramatic and atmospheric experience of the industrial archaeology of a pre-modern commercial city.
