Aceto Balsamico Tradizionale di Modena (Traditional Balsamic Vinegar of Modena) is one of the world's most extraordinary food products, protected since 2000 by the European Union's DOP (Protected Designation of Origin) status. True traditional balsamic vinegar bears no resemblance to the commercial "balsamic" sold in supermarkets worldwide. It is made exclusively from the cooked must of Lambrusco or Trebbiano grapes, reduced and aged in a battery of at least five to seven progressively smaller barrels made from different woods: oak, cherry, chestnut, mulberry, juniper, and ash. The vinegar is transferred between barrels each year as it evaporates and concentrates. The minimum legal ageing period is 12 years for the younger "Affinato" category; the "Extravecchio" must age at least 25 years. The resulting product is thick, syrupy, intensely complex, and deeply sweet-sour. A small bottle of 25-year traditional balsamic can cost 150-300 euros.
